Cream Cheese Chicken Over Rice
0024

Ingredients
- Chicken breasts
- Daily Blend spice mix and other seasonings, to taste
- 1 shallot, diced
- Chicken broth, for deglazing
- Light cream cheese
- Dijon mustard
- Reserved juices from the cooked chicken
- Cooked rice, for serving
- Chopped chives, for garnish
Instructions
- Season the chicken: Season the chicken evenly with the Daily Blend spice mix and any additional seasonings.
- Sear: Heat a pan over medium-high heat. Sear the chicken for 4 to 5 minutes per side, until golden brown and cooked through. Set aside to rest, reserving its juices.
- Cook the shallot: Lower the heat. In the same pan, cook the shallot for a few minutes, until softened.
- Make the sauce: Deglaze with chicken broth, scraping up the browned bits. Stir in the light cream cheese until smooth, then whisk in Dijon mustard and the reserved chicken juices.
- Serve: Spoon cooked rice onto plates, top with chicken and cream cheese sauce, then finish with chives.

- The dish takes about 20 minutes when the ingredients are prepped and the pan is hot.
- Do not overcrowd the pan while searing; space helps the chicken brown well.
- Use enough broth to release the browned bits while keeping the sauce creamy.
- Light cream cheese makes a rich sauce with fewer calories than full-fat cream cheese.
