Spinach and Feta Biscuits

Ingredients
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 1 lb ground pork or sausage
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1/2 tsp ground black pepper
- 6 large eggs
- 3 cups baby spinach, roughly chopped
- 1 1/4 cups shredded mozzarella cheese (divided)
- 3/4 cup crumbled feta cheese
- 1 1/2 cups almond flour
- 1/3 cup coconut flour
- 2 tsp baking powder
Instructions
- Prep: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook Chicken & Onion: Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook, stirring occasionally, for 4 to 5 minutes. Push the onion to the sides of the skillet to create a space in the center. Add the ground chicken and cook, breaking up large chunks, until browned and the onion is translucent (about 8 minutes).
- Season & Cool: Remove skillet from heat and season with salt, garlic powder, and black pepper. Carefully pour off any excess oil and set aside to cool in the pan for 10 minutes.
- Mix Batter: In a large bowl, whisk the eggs until no streaks remain. Stir in the cooled chicken mixture, feta cheese, 3/4 cup mozzarella cheese, and chopped spinach. Add the almond flour, coconut flour, and baking powder, mixing until just combined (do not overmix).
- Shape & Top: Using a lightly oiled large cookie scoop, spoon, or clean hands, scoop about 12 balls of dough onto the prepared baking sheet, spaced 1 to 2 inches apart. Press down gently on top of each ball to shape into a biscuit. Sprinkle the top of each biscuit evenly with the remaining 1/2 cup mozzarella.
- Bake: Bake for 13 to 15 minutes, until the cheese is melted and the biscuits are baked through and lightly browned.
